Homemade Pasta

Since we were snowed in Hiroo had a chance to try his hand at making pasta. He had bought the Semolina flour last week and gotten out my pasta maker. I hadn’t used it in 10 years or more!

The recipe is simple.

300g semolina four

1 Tbls olive oil

1 lrg egg (50g)

60g water

Mix egg and water. Stir in oil , then little by little add egg-water mixture. Knead until wellmixed, put in a plastic bag and let restfor 30 minutes. Roll out to 1/4 inch. Put through the pasta machine several times to help make it mix evenly. Then put through the blade to cut inot desired width.

To boil in water with slat, bring it to a boil, add pasta. When it rises to the top , cook another 3 minutes. Drain.

"Nama " pasta with Prosciutto

“Nama ” pasta with Prosciutto

We had it with prosciutto and parmesan.

Heat 1 oo cc milk, add 1 cup cream, and 20g freshly grated parmesan cheese. Heat till start to thicken, quickly stir in pieces of prosciutto and season with salt and white pepper. Reserve a few slices of prosciutto for garnish!
