Mixed Vegetable Pickles

A great favorite at events and cooking classes, these pickles go well with sausage and wine!

A good low calorie snack with your sausage and wine!

400g-500g raw vegetable cut in 2-3 inch pieces

Japanese cucumber

cauliflower,

celery

paprika

carrot

onion

Pickling liquid;  Mix and bringto a boil:

white vinegar….1 cup

white wine…         50cc

sugar……  50g

salt      ….1/4 tea

Add  2 whole cloves,  one red dried pepper, one  or two peppercorn, 2 bay leaves ,  1/4 teas dried thyme pwd

 

Quarter the onion and boil one minute. Drain. Pack all these into  sterilized jars, and pour the hot vinegar mix over it. Seal. Ready to eat  in 10 days!

This is very popular at most events and cooking classes I have held!
