Banana Blueberry Muffins

Banana Blueberry Muffins with Organic Blueberries from Kido Farm

 

2 bananas, mashed

6 T soft butter or margarine

6 T. brown sugar

1 lrg egg

1  1/2 cups flour

1/2 Teas baking pwd

1/2 teas  baking soda

1 teas grated lemon zest

1/2 cup blueberries

1/2 teas salt

Cream butter and sugar. Add egg and dry ingredients alternately. Stir in banana. If you only have one banana, add a little milk. Put into paper-lined muffin pan. Bake at 375 F (190 C) for 20~25 minutes.
