Chilled Eggplant Sesame Marinade

Chilled Eggplant with Sesame Marinade.

3-4 Japanese eggplants, cut in half length-wise

green asparagus,or green beans (or kaiware)

2 green onions, finely sliced

1 dried red-pepper ( togarashi ), sliced into thin threads diagonally


2 and 1/2 Tbsp soy sauce

1  Tbsp vinegar

1 Tbsp sesame oil

1 Tbsp white sesame seeds

2 teas. sugar

Put 1/4 ” slices into the eggplant, not cutting all the way through at the top.

Cut one half into about 4 pieces. arrange on a steamer and steam six minutes. You can steam teh green vegetable along with it , the last 2 minutes.

Arrange on a platter, fanning out the slices, with green veggie at intervals. Let cool. Sprinkle with red pepper and pour the marinade over it. Place the green onion in the center. Chill in the refrigerator for several hours and serve cold! Refreshing!
