Fukinoto Miso


1 pkg fukinoto (butter bur)  about 7-10

60 g brown miso

3 Tbsp white miso

2 Tbsp sugar

3 Tbsp mirin

1 Tbsp sake

Wash fukinoto. Boil for 2  minutes. Take out into cold water. Chop fine. Mix miso and other ingredients in a pan. Stir. Then add fukinoto. Cook for several minutes until it thickens a bit. Pour into hot sterilized jars and seal. Turn upside down ( to seal) until cooled.
