Kuromame ( BlackBeans)
300 g black beans,washed
250g sugar
1/2 Teas baking soda
1/2 teas salt
50cc soy sauce
10 cups water
Combine all but beans,heat to boil so sugar dissolves. Remove from heat and add beans. Let sit overnight. In the AM, put on medium heat and cook, skimming off the white bubbles. Cook 6 – hours until soft, adding a little water occasionally. Cover and let stnad one to two days. Keep in the refrigerator after that. Can be reheated and cooked a little to make them keep longer.
