Pound Cake

Rum Cake3







2   3/4 cup sugar

1   1/4 cupmargarine  (275 g)

1 teas vanilla

5 eggs (M)

3 cups of flour

1 teas (a little generous?) B.P .

1/4 teas salt

1 cup mild (200 cc)

Rum if desired (1 Tbsp)

Raisin soaked in rum ( 1/4 cup) if desired

Cream butter and sugar. Gradually beat in eggs, adding a little of the sifted dry ingredients alternately. Add mild alternately with dry. Pour into 4 small loaf pans or two medium?

Bake at 170 for 40-45 minutes. Cool slightly and remove from pan. Brush with rum while still warm.

Variation: Orange Coconut Cake

Omit vanilla and rum. Stir in grated orange peel and 1/2 cup coconut.
