Southern Rhubarb Cake

1/2 cup butter, softened

1  1/2 cups brn sugar

1 teas vanilla

1 egg

2 cups flour

1 teas baking soda 1/4 teas salt

1 cup mild with  1 Tablespoon lemon juice

Beat butter add in sugar and beat ill fluffy. Add egg and vanilla. Alternately stir in liquid and dry ingredients.

Fold in 2 cups coarsely chopped rhubarb and   1/2 cups chopped walnuts

Spread in a 9″ by 13″ greased and floured pan.Sprinkle with a  little granulated sugar and dash of cinnamon. Sliced almonds if desired. Bake at 350 for 45 minutes . Cool before serving.
