Cinnamon Rolls, Cheese Buns..

This one simple dough is soft and delicious for anything you want to roll up in it..bacon and onions, cinnamon and brown sugar, cheese and so on!

400 g bread flour  (about 4  1/3 cup )

60 g. sugar( about a generous 1/4 cup)

8 g dry pwd milk

10 g dry yeast ( 1  1/2 Tbs ?)

6g salt

60g shortening  ( about 1/4 cup)

200g water (US cup is 250cc)

60 g egg, slightly beaten ( about on XL)

Combine in a bread mixer, knead 20 minutes. If you are good at it you can knead by hand but the dough should be about 26-28 degrees C when you are done kneading.. I have never tried using my Kitchen Aid for bread .  Let rise in a warm place for 40-50 minutes until double.

Divide into pieces for cheese buns (about 14  55 g pieces) or into  two large for cinnamon rolls. Roll into a ball and cover with canvas or a bowl. Let rest 20 minutes. Shape rolls. Let rise until double again. Brush the rolls with a little beaten egg before baking. Bake separate rolls on a baking sheet at 350 F for 10-12 minutes. If you put the cinnamon rolls together in one greased cake pan, bake at least 20-25 minutes. Ice with pwd sugar glaze.

For cheese buns roll shredded real cheese AND finely cubed processed cheese in the center of the roll. Let rise, then cut a deep slash with scissors to expose cheese. Squeeze mayonnaise into the opening.
