Maple Nut Muffins
This works fine for Blueberry (pictured here) or any kind of muffins. Thanks to Stella Cox for her recipe!
Mix these dry ingredients in a bowl:
2 cups BREAD flour (240g)
1/2 cup light brown sugar (80-100g) or less if desired
3 teas baking pwd
1 teas salt
chopped walnuts
Mix the wet in a bowl, then stir into the dry using a fork, just until dry ingredients are moistened.
1 egg
1/2 (scant )cup salad oil (130cc)
1/2 cup milk*
3 T maple syrup ( or use maple flavoring)
* if making Blueberry or other muffins, without the syrup add a little more milk (160cc)
Fill paper-lined muffin tins 2/3 full. Bake at 400 degrees F (200C) for 20 minutes. These are sweet so you don’t need to eat with butter but can eat them plain. Hope you enjoy these.They are so easy and it’s my favorite sweet muffin recipe!
