Spice Prune Cake
1 cup pitted prunes, cut into fourths
2 teas. instant coffee crystals
3/4 cup (1/2) cup water
1 teas. vanilla
1 stick (100-110g) margarine
1 1/4 cups packed brn sugar
3 eggs
2t baking powder
1/2 teas soda
1 teas cinnamon
1t. nutmeg (less!)
1/2 teas cloves
1/2 teas allspice
2 1/4 cups flour
chopped walnuts
Cream butter and sugar. Add vanilla. B.P., soda( a bit of salt) and spices. Gradually beat in eggs. Add flour and dissolved coffee alternately. Bake in a Bundt pan at 350 F (180 C) for 35-45 minutes/ I used 3 small loaf pans and bake it 35 minutes.
