Tabouli Salad

 

2 cups cooked and cooled quinoa

1 clove garlic, chopped fine or pressed

2 T chopped basil (or dry)

2 T fresh mint, chopped fine

1/2 to 1 cup chopped parsley

chopped tomato (optional)

1/2 cup chopped green onion

juice of 1 lemon (1/3 to 1/2 cup)

1/4 cup olive oil

salt 1/2 teas,  white pepper

Mix quinoa and veggies. Make dressing with olive oil and lemon, add salt and white pepper to taste.

Chill an hour or more before serving to let the flavors blend through it.
