Yuzu Miso


5-6 yuzu

1 kilogram Shinjo Golden Miso

700-800 g sugar

100cc mirin or sake

grated zest  (peel) of the yuzu

Stir sugar and mirin into the miso and cook over low heat, stirring constantly so it doesn’t burn!! Cook until thickened a bit. Add grated yuzu peela nd the juice of yuzu. Cook another 2-3 minutes. Pour into hot sterilized jars and seal.
